🔥Pork kimchi jjigae, #3 on 10000recipe (the trick is marinating the pork first)

7SoominAm2026.10.05 18:09👁 3419💬 76♥ 65

This one is #3 on 10000recipe's home cooking ranking right now, with almost 6 million views and more than 1,200 comments. Kimchi jjigae is what Koreans make when the kimchi in the fridge gets too sour to eat on its own, and the trick in this version is marinating the pork for 30 minutes before it ever touches the pot. Serves 3, about 30 minutes of cooking.

Ingredients 2 cups water (250ml cups) 250g pork for stew, or pork shoulder (moksal) 200g sour kimchi 5 tbsp kimchi juice 1 tsp sesame oil 1/2 onion 2 green chilies A little green onion (daepa) Tofu (the steps add it, the list doesn't give an amount) Pork marinade 1 tbsp gochujang 1 tbsp mirin 1/2 tbsp soup soy sauce (guk-ganjang) 1 pinch salt 1 tbsp minced garlic A little black pepper 1. Mix the marinade into the pork and let it sit for at least 30 minutes.

2. In a pot, add the chopped kimchi, the marinated pork, 5 tbsp kimchi juice and 1 tsp sesame oil. Stir-fry on low heat for 3 to 5 minutes.

3. Keep frying until the kimchi is well cooked. The pork already has its own fat, so you don't need much sesame oil.

4. Pour in 1 cup of water and bring it to a boil.

5. Once it's bubbling, add the second cup. The author says splitting the water like this gives a better broth than pouring it all in at once.

6. When it boils again, add the onion and the tofu.

7. Add the soup soy sauce (guk-ganjang).

8. When everything has come together, add the minced garlic and one chili sliced diagonally.

9. Season with salt if it needs more, add the green onion and the other chili, let it boil up once more and it's done.

The reviews are cute. One person said it was the first kimchi jjigae they ever made and their boyfriend finished two bowls of rice, another swapped part of the seasoning for tuna fish sauce (chamchi-aekjeot), and one family added Spam on top of the pork because they're Spam lovers. Respect. Pork only, or are you a Spam/tuna kimchi jjigae person?

Marinating the pork first is the step I always skip because I'm hungry. 30 minutes feels like forever but I bet that's why the meat doesn't taste boiled

4Elif2026.10.06

how sour is sour enough? like how many weeks?

6kkt.882026.10.07

참치액 is sold in most Korean marts now, it got really popular in the last few years. Abroad, try a Korean grocery, small bottle goes a long way

5Ayşe2026.10.05

The two-stage water trick again! Same as the miyeokguk one. Now I want someone to explain why it works, I just believe it

5tteok_and_roll2026.10.07

Spam lovers adding Spam on top of pork is a ham-azing commitment

5Sanne2026.10.05

Can I use bacon if I can't find pork shoulder?

↳
5Sanne2026.10.06

ok pork belly it is, thank you!!

↳
7SoominOP2026.10.06

Bacon works but it's smoky, so the stew tastes different. Pork belly is the easier swap if you can find it

↳
6Lukas932026.10.06

Bacon kimchi jjigae sounds illegal but I'd eat it

↳
6hanbyeol2026.10.06

Lots of Koreans abroad use pork belly or even canned tuna. Tuna kimchi jjigae is its own classic here

Sour kimchi is non-negotiable. If your kimchi is fresh, wait a week. Using fresh kimchi in jjigae is how foreigners end up saying it tastes 'fine'

↳

Different dish, yes. Called "fine", also yes

↳
6devils_avocado2026.10.06

Counterpoint: fresh kimchi jjigae is a different dish, not a wrong one. Lighter. I like it

↳
7Nari2026.10.06

My neighbor in Busan gave me her old kimchi specifically for jjigae. That's how I learned this rule

↳
6Hajun2026.10.06

Gatekeeping kimchi age is the most Korean thing I've seen today and I fully agree

5gochujang_gang2026.10.05

Marinating the pork first is the step I always skip because I'm hungry. 30 minutes feels like forever but I bet that's why the meat doesn't taste boiled

↳

the hungry skip is real. I marinate while the rice cooks, problem solved

↳
7SoominOP2026.10.06

I used to skip it too, but when I waited the pork tasted seasoned all the way through instead of boiled. Worth it

↳

30 minutes is enough time to give up and order delivery. That's the real danger

6 million views and 1200 comments for kimchi jjigae is the most Korean stat ever. Everyone already knows how to make it and still checks the recipe

↳
6kkt.882026.10.06

Every Korean knows how to make it and every Korean's version is slightly wrong according to their mom

↳
5dongdong_2026.10.06

Checking a kimchi jjigae recipe is like googling how to tie your shoes, but we all do it

5Ayşe2026.10.05

The two-stage water trick again! Same as the miyeokguk one. Now I want someone to explain why it works, I just believe it

↳
7SoominOP2026.10.06

Ha yes, same idea as the miyeokguk. The authors just say the broth comes out better, nobody explains the science

↳
5gochujang_gang2026.10.06

My guess: the first small pour boils down fast with the kimchi and concentrates, then the second cup is just volume. Could be wrong

5tiny.tigress2026.10.06

Tofu in the steps but not in the ingredients list is how you know a real home cook wrote this

5Kasia2026.10.06

My kimchi never gets sour because I eat it straight from the jar. Problem

↳
5Gyuwon2026.10.07

Eating it all before it sours is a skill issue in reverse

6Jaehee2026.10.06

Spam on top of pork is chaotic good, I respect that family

↳
5jaywalker2026.10.07

Chaotic good is generous. That's a pork-on-pork crime and I'd still eat two bowls

5dadjoke_dk2026.10.06

Why did the kimchi break up with the pork? It needed space to ferment. I'll leave

6Dain2026.10.06

Kimchi jjigae, fried egg, rice. My rainy day food, no debate

↳
5Ayşe2026.10.07

Fried egg on the side is such a good call. Doing that

4Niamh2026.10.06

printed it, making it for my flatmates this weekend

↳
4Niamh2026.10.07

update: made it, flatmates went quiet for ten minutes. best review I've ever had

6ppalli_ppalli2026.10.06

목살 (moksal) = pork shoulder/neck. That one word saved me at the butcher

5Ana.Lu2026.10.06

"Boyfriend finished two bowls of rice" is the best review a recipe can get

↳
5Lucia2026.10.06

two bowls of rice for a first try... I'm crying, that's a wedding speech-level review

Smelling this from someone's window on the walk home is Seoul in winter to me

6busan_or_bust2026.10.06

tuna fish sauce is a thing?? where do you even buy that

↳
6kkt.882026.10.07

참치액 is sold in most Korean marts now, it got really popular in the last few years. Abroad, try a Korean grocery, small bottle goes a long way

↳
7SoominOP2026.10.07

It's a sauce made with tuna extract, used like a seasoning. A spoon in jjigae adds savory depth, but the recipe here doesn't need it

↳
5curiosa_br2026.10.07

is tuna fish sauce actually from tuna or is it just called that?

7Dahye2026.10.06

Kimchi jjigae at a tiny place near Euljiro after work is the most comforting meal in Seoul to me

7Siwoo2026.10.06

In Norway sour things in the fridge just get thrown away. Learning that Korea turns them into dinner is changing my life

↳
5tteok_and_roll2026.10.07

Sour kimchi isn't a problem, it's an ingredient. Life lesson in a pot

6hazel_n_honey2026.10.06

Marinade with mirin and gochujang before the pot sounds like a kimchi jjigae for people who want restaurant flavor at home. Saving

5Elena.v2026.10.06

The photo at step 9 with the chili on top looks like a winter evening I want to live in

4Elif2026.10.06

how sour is sour enough? like how many weeks?

↳

Taste it. If your face scrunches a little, perfect. If you're not sure, it's not ready

↳
7SoominOP2026.10.07

The recipe doesn't say and it depends on your fridge. If it tastes clearly sour on its own, it's ready

↳
6kkt.882026.10.07

For store-bought, usually a few weeks after it's opened. Homemade depends on the fridge. Your nose will tell you before the calendar does

6ppalli_ppalli2026.10.07

Vocab: 신김치 (sin-gimchi) = sour kimchi. 신 here is sour, not new. Easy to mix up

↳
6hanbyeol2026.10.07

And the 신 in 신라면 is spicy (辛), a different 신 again. Korean likes to keep you humble

5tteok_and_roll2026.10.07

Spam lovers adding Spam on top of pork is a ham-azing commitment

6Zeynep2026.10.07

Tofu missing from the ingredient list but showing up in the steps is so relatable. I write recipes like that too

4Arif2026.10.07

is it okay to use gochugaru if I don't have gochujang for the marinade?

↳
7SoominOP2026.10.07

You can, it'll just be a little less sweet and less rich. A pinch of sugar with it helps. Gochujang is what the recipe uses though

↳
4Sølvi2026.10.07

did it work with gochugaru? curious too

5jjk_enjoyer2026.10.07

Tuna, Spam, pork. Kimchi jjigae is the only dish with three different factions and they all win

↳

Tuna faction for midnight, pork faction for weekends, Spam faction for when you've given up

6Jiyul2026.10.07

Kimchi jjigae bubbling on the stove is every 2000s drama family dinner scene. I can hear the OST

5Chiara2026.10.07

Making this tonight! The step photos make it look so doable even for me

7Haeun2026.10.07

6 million views and #3 in the ranking. Kimchi jjigae is the Dynamite of home cooking, it just never leaves the chart

↳
6Lukas932026.10.08

Dynamite of home cooking might be the wildest comparison I've read on this site. Not wrong though

5Camila2026.10.07

Marinating first is a stew-pendous idea

3Jonas2026.10.07

saving this for the first cold weekend

4Doha2026.10.07

Saved it. Two-stage water plus marinated pork, this feels like a recipe someone's mom perfected over years

6pixel_gremlin2026.10.07

30 minutes of marinating is the loading screen. You can't skip it, you just suffer

↳

The loading screen is the part where I eat half the kimchi raw and then have to open a new jar

6Yoonseo2026.10.07

Vocab: 국간장 (guk-ganjang) = soup soy sauce. Lighter in color but saltier than regular soy sauce, so don't swap it 1:1

↳
6Yoonseo2026.10.07

And regular soy sauce is 진간장 (jin-ganjang). Good pair to learn together, the bottles look very similar at the mart

8Taeho2026.10.07

Kimchi jjigae is also the classic drama "I made you dinner" dish. Half the reconciliation scenes I've watched happen over a pot of this

5gochujang_gang2026.10.07

Made it last night with pork shoulder. The marinade step makes a difference, the pork doesn't taste boiled at all. Doing the egg next time

6hanbyeol2026.10.08

Any pot works for this. Stone pots keep it hot at the table, but the taste is the same

6Olu2026.10.08

First time cooking Korean here. Is a regular pot fine or do I need one of those stone pots?
