🔥Turning Chapagetti into restaurant-style gan-jjajang (cabbage, scallion oil, fried egg)

7SoominAm2026.10.05 10:30👁 2219💬 46♥ 55

Chapagetti is already great straight out of the pack, but there's a whole genre of Korean home cooks trying to make it taste like 간짜장 (gan-jjajang), the stir-fried black bean noodles you order from a Chinese-Korean restaurant. I found one on 10000recipe that's honestly more cooking than a ramyeon deserves, and I love it.

The author opens with the old TV ad line "일요일은 내가 짜파게티 요리사" (on Sunday, I'm the Chapagetti chef). Their wife wanted jjajang ramyeon for a Sunday brunch, the fridge only had cabbage and one onion, so this happened. The trick is that you don't mix the powder in the pot. You stir-fry the vegetables with the sauce powder in a hot pan and toss the noodles in it, like a restaurant would. Ingredients (2 hungry adults) 3 packs Chapagetti About 1 rice bowl of cabbage (around 1/8 head) 1 cup sliced green onion (daepa) 1 onion 2 eggs Cooking oil Gochugaru, to taste 1. Get everything ready. They used 3 packs for 2 adults, which I fully support.

2. Heat oil in a pan and put in a lot of sliced green onion to make scallion oil. This is for the "Chinese restaurant fire" flavor. The author says they wanted even more green onion but that was all they had.

3. Add the cabbage, cut into pieces about one or two finger joints long.

4. Stir-fry on high heat for only 30 seconds to 1 minute.

5. Add the onion and the Chapagetti powder soup, and fry quickly on high heat for another 30 seconds to 1 minute. The author found the powder doesn't dissolve well in the pan, so they suggest loosening it with some of the noodle water.

6. Meanwhile, boil the noodles with the flake packet in another pot. The pack says 5 minutes, but since they get fried again, boil them for only 4 to 4 and a half minutes.

7. Move the noodles quickly to the pan and toss them on medium heat with about half a paper cup of the noodle water so everything mixes. Press the sauce hard with a silicone spatula to break it up, and do it fast before the noodles go soft. Use the empty pot to fry the eggs.

8. Plate it and put the fried egg on top.

9. Sprinkle gochugaru if you like. The author's advice is to eat the yolk together with the noodles because it gets really rich.

I usually do jjapaguri when I want to upgrade Chapagetti, so the cabbage version is new to me. I'm going to try it this weekend because cabbage is something I always have. Has anyone tried pork belly in this too? A lot of the other versions on the site add it.

Made this at 1am with half a cabbage and no egg. The 30 second cabbage step is real, it stays crunchy and sweet. Roommate woke up from the scallion oil smell and took half, so that's 3 packs gone

Little vocab thing: the 간 in 간짜장 comes from 乾, "dry". The sauce is stir-fried fresh without the watery starch, so it's less gloopy. That's exactly why frying the powder in the pan makes sense

"3 packs for 2 adults" is the most honest recipe line ever. The scallion oil step is the real upgrade imo. Pork belly would work but then it's not Sunday brunch anymore, it's a Sunday nap

6Lukas932026.10.07

Is that true everywhere though? I've had gan-jjajang with the sauce already on top in some places

5Noor2026.10.06

the powder not dissolving in the pan is SO real, I always end up with one black clump

Emotional support noodles. Yes

7SoominOP2026.10.06

Sunday nap is the true ending of any 3-pack brunch

5kimbap_kid2026.10.06

3 packs for 2 is just math. 1.5 each, the extra half is emotional support

↳
5gochujang_gang2026.10.06

I add pork belly and accept the nap. Worth it

Right, and that's also why gan-jjajang usually comes with the sauce in a separate bowl at restaurants

↳
6Yoonseo2026.10.06

And in 간을 보다 it means tasting for seasoning. Three different 간 in one bowl

↳
6ppalli_ppalli2026.10.06

Adding to my notes: 간 = dry (乾) here, not liver, not seasoning. Korean is a minefield

↳
5Tenzin2026.10.06

Thank you, I always wondered what the 간 was. I thought it was 간 as in liver lol

that roommate is a legend

6Jaehee2026.10.06

A roommate waking up to scallion oil is the most powerful alarm clock in existence

7SoominOP2026.10.06

1am with no egg still counts!! the cabbage really stays sweet that way, glad it worked

↳

It counted. It counted so hard

6Dain2026.10.06

the fried egg on top is mandatory, I won't accept otherwise

Chapagetti purists will hate this. I don't. Scallion oil makes everything better

5nunchi_zero2026.10.06

Me making ramyeon: water, noodles, done. Me reading this: maybe I'm the problem

↳
5Noor2026.10.06

Same. I read the steps and felt like I was being graded

5tteok_and_roll2026.10.06

Chapagetti chef on Sunday, couch chef on Monday. A balanced week

7Dahye2026.10.06

Gochugaru on jjajang is the move, it cuts the sweetness

5Ayşe2026.10.06

Making this with way too much green onion this weekend

4메아리2026.10.06

짜파게티 3봉 인정 (3 packs, respect)

↳
5lyric.thief2026.10.07

"Sunday, Sunday, I'm the chef" is literally the song. It sticks forever

6busan_or_bust2026.10.06

Is Chapagetti easy to find abroad? Never tried it

↳
6hanbyeol2026.10.07

Most Korean marts abroad have it, and a lot of big supermarkets in Asia too. It's one of the easier ones to find

7Minjae2026.10.06

Most wholesome recipe backstory. Wife wants jjajang, husband makes the restaurant version with what's in the fridge

5Noor2026.10.06

the powder not dissolving in the pan is SO real, I always end up with one black clump

↳
6Jaehee2026.10.06

The black clump is my signature dish

6Seoa2026.10.06

Yakisoba people do the same thing in Japan: fry the sauce in the pan, never in the pot. Makes sense

↳
7Sebin2026.10.07

Fry-the-sauce-in-the-pan seems to be the universal rule. Pot mixing is how you get the clumps

This is more effort than I put into my actual job. Saving it anyway

7Siwoo2026.10.06

Using 3 packs and calling it brunch is the most Norwegian thing I've seen come out of Korea

4Elif2026.10.06

would this work with jjapaguri too or does the neoguri part ruin it?

7Nari2026.10.06

Busan Chinese restaurants do gan-jjajang with a fried egg on top too, so this is very legit

6kkt.882026.10.06

The 일요일은 내가 짜파게티 요리사 jingle is burned into every Korean brain over 30. My dad still sings it on Sundays

6pixel_gremlin2026.10.06

The recipe is basically a speedrun. 30 seconds, 30 seconds, 4 minutes. Do not pause

5Fernanda_m2026.10.06

Saved. Cabbage is the one vegetable I always forget in the fridge, this is its redemption arc

5Gyuwon2026.10.07

Three packs is not a recipe, it's a lifestyle

5Elena.v2026.10.07

Fried egg with the yolk running into the noodles. I'm not okay

6ppalli_ppalli2026.10.07

Vocab: 대파 (daepa) = big green onion, the thick one. 쪽파 is the thin one. The recipe needs the big guy

5kimbap_kid2026.10.07

jjapaguri + cabbage + scallion oil sounds like a crime and I want to commit it

6Minh2026.10.07

Cabbage for 30 seconds only is the key pass. Overcook it and you lose the match

6hazel_n_honey2026.10.07

The paper cup measurement is so Korean. Half a paper cup of noodle water, I love it
