Radish and fish sauce make water either way. I'd salt at the last minute and eat it the same night, day two is a different salad.

Make the whole 600g, it disappears faster than you think. Bossam night, over rice, straight off the spoon at midnight.

Making this tonight for tacos, don't judge me

600g of radish is a lot of radish for one person. Do I halve it or just commit to eating it all week?

Thin cut really is everything. If you have a mandoline, use it, your wrist will thank you

No salting means it stays crunchy, that's the whole appeal for me

Does it hold up till the next day or go limp? Radish without salting tends to weep, I'd want to know before making a batch.

in Germany we'd call this a side salad and nobody would put gochugaru on it. big upgrade honestly, even if my flatmate still flinches at fish sauce
